Gingerbread Men… or Ninjabread Men!

I think the Christmas season is the perfect time of year to indulge… to indulge in an abundance of healthy foods, to indulge in long walks and new fitness routines, to indulge in time spent with family and friends… even when it goes into the wee early morning hours. But this holiday season let’s not over indulge in unhealthy foods and bad habits that you’ll only regret. To help you enjoy a healthier holiday season, here’s a Gingerbread recipe with a healthy “kick”!

Ninja bread men

Ginger…NinjaBread Men

Ingredients:

  • 1/2 ripe plantain
  • 2T coconut butter
  • 2T maple syrup
  • 4T blackstrap molasses
  • 1/2c Tigernut flour
  • 1/3c almond flour
  • 1/4c coconut flour
  • 1.4c arrowroot starch
  • 1/2t baking soda
  • 1t each cinnamon & ginger
  • 1/2t cloves
  • pinch of
  • salt

Directions

Preheat your oven to 350°F

Begin by peeling peeling the plantain. Place half of your plantain in the blender. [Freeze the other half for another recipe or save for a second batch of gingerbread cookies]. Also to the blender, or food processor, add the coconut butter and liquid ingredients. Blend until smooth.

In a separate mixing bowl, sift together all of your dry ingredients. Next mix the contents of your blender into the mixing bowl and combine. The dough will be sticky.

On a clean surface, spread a little of the arrowroot starch and roll out your dough (you may have to add more as you roll it out). Use whatever fun cookie cutters you have and begin to cut fun shapes; maybe a 1/4 inch in thickness. Transfer the cookies to a lightly greased or parchment lined baking sheet and bake for 14 min.

When the cookies are finished, allow them to cool before frosting!… ps- it’s okay to indulge in these cookies!
