So I was definitely in the mood for something simple after a long day and the boyfriend loves wraps, problem solved right?. Nope. I like wraps too, but finding a gluten free version can be tricky. Thank goodness for rice paper wraps!
These are so stinkin’ easy to put together and the peanut sauce is even easier (and a must!) to whip up.
Thai Peanut Sauce (or Dip)
Vegan, Gluten Free
- 1/2c creamy peanut butter [I cut the fat using peanut flour to make peanut butter]
- 1/4c sesame oil
- 1/4c agave nectar
- 1T apple cider vinager
- 1 1/2t tamari (or gluten free soy sauce)
- 1/2-1t ginger
- pinch of salt
When I say easy peanut sauce, I mean it! Take all of your ingredients and stir them together. Thin it with a tablespoon or two of water if it’s too thick for your liking.
This sauce is not only great for dipping spring rolls in but it makes a fabulous salad dressing or marinade. I marinated some tofu and baked it in the over for a few minutes. It made for an ideal protein in my spring rolls, giving them an extra peanutty kick!
