Jack and Chocolate Pumpkin Pie

Pumpkin pie never seems to make an appearance at any of my family dinners.  As I’ve mentioned, I’m not a pie enthusiast and I think the same could be said for most of my family.  But in the last year I’ve finally tried pumpkin pie and it wasn’t half bad… it was even better after I’d added a little Jack and chocolate to the mix!

For a chocolatey, boozy take on pumpkin pie, give this recipe a try!

Jack and Chocolate Pumpkin Pie

Grain free, vegan

  • 1 can pumpkin puree (not pie mix)
  • 2T Jack Daniels
  • 2t cocoa powder
  • 1t vanilla extract
  • 1c semi-sweet or dark chocolate (you can use chips or, like I did, smashed chocolate bar pieces)
  • 1t coconut oil

On the stove top add coconut oil and chocolate to a pot and set on warm.  Stir until chocolate has melted then stir in Jack and vanilla extract.  When it’s all creamy and smooth, fold in the pumpkin puree.  Mix well and pour the mixture into a crust of your choosing and set in the fridge to cool.  I made a quick “raw crust” instead of a store-bought pie shell (see recipe below)

You could also you a tart pan (I did) if you want to make “mini pies” as opposed to one big pie.

Jack and Chocolate

This Jack and Chocolate Pumpkin has a consistency like that of mousse with an even more amazing taste!  I hope every one had a very happy Thanksgiving, now bring on Christmas! ho ho ho

Raw Crust Recipe:

  • 1c pecans
  • 1/2c walnuts
  • 1t vanilla extract
  • 8-12 medjool dates

Place all the ingredients in a food processor and process until you have a crumbly texture that sticks together when you smoosh it.  Press this raw crust into a pie or spring form pan and put your pie ingredients on top.

Jack and Chocolate gluten free

I know Thanksgiving is over, but this recipe is certainly worthy to grace the table at any future  gatherings of family or friends.  Who can resist booze and chocolate!? haha.
