Even though it’s still 80 degrees in Florida, I’m trying to get into the spirit of the Season. I’m in love with the Christmas season (sorry Thanksgiving) and so I’m trying to sneak in any little treat or activity that makes it seem like Christmas.
(How cute is my little nephew?! hehe)
I’ve already begun decorating, listening to Christmas music and watching some very sappy Christmas movies. Meal planning is also an essential part or the Christmas holiday and in addition to preparing meals for Thanksgiving and Christmas, I’ve been asked to prepare some healthy treats for a Women’s Benevolence event at my church. [Feeling pretty honored about that]. What little treats can I make?!
First thing that came to mind was something with cranberries. Who doesn’t have cranberries at during the holidays, right? Whether the cranberries be canned, tossed in cookies and pies or baked into some delicious Orange Cranberry Muffins, they most certainly make their appearance on many tables this time of year.
Orange Cranberry Muffins
Grain free, vegan
- 1 large ripe plantain (brown/yellow)
- 1/2c arrowroot starch
- 1/2c coconut flour
- 3T orange juice
- 1/4 agave syrup
- 1/8 uncut stevia (or two packets)
- 2T orange zest
- 3T coconut oil
- 1/4c dried cranberries
- *optional: 1t cinnamon (I used it!)
Preheat oven to 350F and lightly grease a muffin (or mini muffin) baking tray. In a blender, puree your ripe plantain with liquid ingredients and set aside. In a large mixing bowl mix together arrowroot starch, coconut flour and stevia.
Pour liquids from blender into the mixing bowl and stir batter together along with orange zest. When the zest is well incorporated begin to add in the dried cranberries [originally I was only going to use 3T but I think I used a very generous 1/4c]. The batter will be fairly thick and appear a bit fluffy (not liquidy like pancake batter).
Spoon batter into lightly greased muffin pan. Each muffin holder should be about 2/3 full of batter because these light and fluffy muffins will rise while baking. Place tray in preheated oven and bake 16-18 minutes.
