Honey Cider Bread

It’s been a busy weekend, sorry for the lack of recipe posts.  No worries though, despite the busyness I still found time in the kitchen to whip up some new recipes.  Life happens and you have to enjoy it (and just blog about it later).  Late night Seahawks football, awesome dates and double races; so much awesomeness.  Can’t wait to share with you some photos from my Savage Race adventure and Neon Run.  Until then, enjoy this Honey Cider Bread with me!

Honey Cider Bread

Vegan, Gluten Free

Ingredients:

  • 1 large ripe plantain
  • 1/3c honey
  • 2T molasses
  • 2T coconut oil
  • 1T vanilla extract
  • 1 flax egg (1T flax meal + 3T water; leave to gel 5 minutes)
  • 1c sorghum flour
  • 1/2c arrowroot starch
  • 1/2c coconut flour
  • 1t baking soda
  • 1t baking powder
  • 2t cinnamon
  • 1t nutmeg
  • 1/8t allspice
  • 1/8t cloves
  • 1 bottle cider (I had a Woodchuck in the fridge)

Honey Cider(I used Woodchuck but I think Angry Orchard would be really good!)

Directions:

Preheat oven to 350F and grease and 9×5″ loaf pan with coconut oil.  In a blender, puree plantain, honey, molasses, coconut oil and vanilla extract.  Sift together dry ingredients in a large mixing bowl pour in mixture from the blender, flax egg, followed by bottle of cider.   Stir batter together until well combined.  Pour the batter into loaf pan and bake 50 minutes.

After you’ve pulled the loaf out of the oven, allow the loaf to cool 10-15 minutes on the counter before you remove your bread from the pan.  Slice it up and enjoy!

I love that this bread is gluten free and vegan, but I love it even more because it’s got an amazing apple spice taste to it.  The Honey Cider Bread moist and only lightly sweetened thanks to the honey and cider ale.  Honey Cider Bread has a taste that’s so delicious, it can be eaten all by it’s lonesome.  I like to top these apple spiced slices with just a little almond butter or pumpkin butter frosting (recipe coming soon).
