It’s not even Halloween yet, but somehow I’ve already been to three Halloween parties and have gone trick-or-treating twice! I now have enough candy to feed a small nation and I don’t even like candy. Well to be honest, I do have a soft spot for candy corn. It is in no way vegan or healthful but that old 80/20 rule rings in my mind when the candy corn comes out. So while I’ve given out the majority of the candy, I reserved a few of those white, orange and yellow triangles for a special halloween treat.
Candy Corn Cookie Dough Bites (V, GF, Raw)
- 1/2c cashews (preferably raw)
- 1/2c gluten free oats
- 2T maple syrup
- 1/4t cinnamon
- 1T vanilla extract
- (optional) 1/4t butter extract
- 3T candy corn (vegan candy corn can be found on-line)
Place cashews, cinnamon and oats in a food processor and blend until finally ground. Now add your liquid ingredients and process for about 3 minutes. In that time the “batter” should form a very thick ball (it may possibly begin to roll around in the processor. It’s kind of funny.). Now add your candy corn and process just enough so the candy corn breaks apart and is incorporated. The batter ball will break apart, but your done, so no worries. Scoop the batter with a spoon and roll it between your palms to form walnut sized cookie bites.
These bites are like raw cookie dough goodness minus eggs, oil, dairy and most the junk you find in “real” raw cookie dough. If you want to make these completely vegan, omit the candy corn and add cacao nibs or dairy-free chocolate chips and you’ll have raw chocolate chip cookie dough bites. BUT it’s Halloween and you should enjoy the little things, like carving pumpkins, trick-or-treating, and eating candy corn!
