Spiced Peach Carob Smoothie

I am most definitely a smoothie enthusiast.  Smoothies are the easiest (and most deceptively delicious) way to sneak some extra veggies into your day.  The average American eats only 3 fruits and vegetables per day but the sad news is kids, we should be aiming for 5 to a whopping THIRTEEN each day! (more info. here)

Fortunately, the majority of my smoothies include at least 3-6 servings of fruits and vegetables.  This morning I came up with a Spiced Peach Carob Smoothie.  Once again, the change in season is giving me these cravings for cinnamon spiced sweetness, that, and I had a peach to use. Kristine and the Giant Peach, what to do?  If only I could have crawled inside like young James (James and the Giant Peach anyone?). My Spiced Peach Carob Smoothie is of course packed with fruits, veggies and other wholesome things.

Serves 3

  • 1 large ripe banana
  • 1 large (or 2 small) peaches
  • 1c chopped frozen spinach
  • 4 peeled, chopped carrots
  • 1c frozen peas, thawed (optional)
  • 1t cinnamon
  • 3t maca powder
  • 1/4c carob powder (feel free to use cacao powder instead)
  • 2T coconut flour
  • 1c water
  • 2c almond milk (or other non-dairy milk)
  • (optional) sweetener of choice

Put all of your ingredients in a high powered blender and blend away.  If you plan on drinking this right away, be sure to add a handful of ice cubes.

I like to divide the smoothie between 3 mason jars with secure lids and store in the fridge for easy breakfasts on the go!

Ignore the apples in the Spiced Peach Carob Smoothie photo above (I might just be coming up with some new Fall recipes.  Apple pie fans out there?)

If you’ve never had carob powder, you’re in for a treat.  I mentioned that you could use cacao powder as a substitute but in all honesty cacao is no substitute (still delicious, just not the same).  Carob has a sweet, nutty and almost caramel-like taste and has great benefits to your health.  Trying using it in place of cacao in some of your recipes and take your snacks to a whole new level.

Well, that’s it for now.  Have a “peachy” day!
