Fall is nearly in the air and after smelling the new Fall aromas at Bath & Body Works I was inspired to make a new Fall treat. It’s still 90 degrees in Florida, but the humidity seems to be fading, so bring on the boots, sweaters and Sweet Potato Maple Doughnuts!
Sweet Potato Maple Doughnuts (Grain free, Vegan)
- 2T Coconut flour
- 1/2c arrowroot starch
- 1/2c millet flour (flour of choice should work)
- 2 1/2t baking powder
- 2T flaxmeal
- 1/3 scant sugar (or sub 1/4 maple syrup + 1/8t uncut stevia)
- 1/4t vanilla extract
- 1/4t maple extract
- 1/2c mashed sweet potato (pumpkin or squash puree will work, too)
- 1t apple cider vinegar
- 3T coconut oil
- 1/2c hot water
- (optional) dash of cinnamon, nutmeg
Preheat oven to 350F and lightly grease your doughnut pan; if you don’t have a doughnut pan, these will make for great muffins!
Whisk together your dry ingredients. Add in your wet ingredients pouring in the water last.
Scoop batter into pan and bake 14-16 minutes.
Frost these bad boys with whatever you’d like. Something like my simple chocolate frosting would be great, or give this a try…
Maple Coconut Frosting
- 1/4c coconut butter
- 2T maple syrup
- 1T almond milk
These doughnuts made for a great victory treat after my Seahawks annihilated the Jaguars (sorry fellow Floridians, but I’m a Sea-Gal through and through).
Other great weekend activities this weekend included an amazing “Peace Day Celebration” party [any excuse for a party, right?]. The party consisted of great food, friends, fireworks, jello-shots and fun on the water. An epic end to the summer.
And a weekend is not complete without a great date! Sushi and Pechakucha… Pechaku-what?
I’ve never been to anything like Pechakucha, but thankful to have been there. It was so encouraging to listen to such a diverse group of people from the community sharing their thoughts and ideas that could be of great benefit and inspiration to the community (and dare I say, the world?). hehe.
