Okay, no, I don’t have a date tonight but these brownies would be perfect for you and that special someone. Or just you.
If you’re kickin’ it solo, no date means more brownie goodness for you, and there’s your silver lining. Smile.
Date Night Brownies
serves 2 (you don’t have to share, yay!)
- 1 yellow/green plantain
- 3T gluten free flour of choice (I used a blend of hemp flour, coconut flour and arrowroot starch)
- 6T cocoa powder
- 1/4t baking soda
- 1/4t salt
- 2T strongly brewed coffee
- 2T almond milk
- 2T maple syrup (or Frangelico plus stevia for a boozy brownie!)
- vanilla stevia (to taste; feel free to omit)
- 2 squares of quality chocolate
Preheat oven to 325F. In a blender (I used my magic bullet ), blend together plantain and liquid ingredients until smooth.
In a small bowl stir together your dry ingredients. Pour liquid mixture into your dry ingredients and stir together. Your batter will be very thick!
Divide the batter between two small ramekin dishes. Press 1 chocolate piece into each ramekin. Place ramekins in oven and bake 15 min.
These brownies come together in under 20 minutes (including bake time). They’re not overly sweet but rich and chocolatey. The brownies don’t come out like your typical Pillsbury boxed mix but a little more like mini souffles!
I had a little of my simple chocolate frosting left and didn’t mind
smothering frosting my brownie with it. A sweet ending to a good night.
