Another glorious day to rise and shine! I woke up and did the usual devos in the gym. Followed by a short run and some light ab workout.

“And pray in the Spirit on all occasions with all kinds of prayers and requests. With this in mind, be alert and always keep on praying for all the Lord’s people.” Ephesians 6:18

After the workout I joined my gal pal, Gretchen, for Bikram Yoga. Have you ever tried it? As if Florida is not warm enough, we practiced yoga in a 90 degree studio. I did not sweat, I rained! And it was glorious. I highly recommend it.
After a crazy long morning of workouts I needed some fuel and came up with the Green-oa Bowl. Don’t let the color throw you off, it was delicious.
Recipe: (serves 1)
- 1/4c quinoa
- 1/2c water
- 1/2c vanilla almond milk (mine is homemade)
- 1 frozen banana
- handful (or two) of spinach
- 1/2c frozen (thawed) cauliflower
- 1t vanilla extract
Prepare quinoa as directed.
In a blender, blend 1/2c almond milk, banana, spinach, cauliflower and vanilla (sweeten if necessary, though the banana lends plenty of sweetness).
Pour delicious, “green slime” over the quinoa and sprinkle on whatever toppings you’d like! scarf.
I topped my green-oa with maple roasted acorn squash, cinnamon and walnuts.
Again, don’t let the color fool you, this tasted wonderful and was wonderfully filling!
Next up was a walk with Romeo and Gretchen around Winter Park. We may have stopped to enjoy a glass of wine or two at The Wine Room…
The drinks didn’t stop there. Later that night we were joined by Gretchen’s boyfriend and another friend for dinner at Rocco’s Tacos. If you’ve never been, GO! Their table side guacamole is a must! Hmmm… guacamole recipe coming soon????
